{Guest Post} Chicken Tortilla Soup

I'm excited to share with you a recipe that is great for using leftover chicken. I always buy a whole chicken when they go on sale just so I can have enough chicken leftover to make this soup. It is so quick and easy to put together. Perfect for my busy schedule and not to mention it is pretty yummy too.




Chicken Tortilla Soup



What you need:
Chicken, shredded {This is where that leftover chicken comes in handy}
1 cup corn
1 can Rotel tomatoes, do not drain
32 oz chicken broth
A dash of salt, pepper, garlic powder, and a pinch of ground cumin
Cheddar Cheese, shredded
Sour Cream
Tortilla Chips



Combine the chicken, corn, Rotel tomatoes, chicken broth, and seasonings into your beloved cast iron dutch oven. If you don't have a beloved cast iron dutch oven any large pot will do. Give it a good stir and bring to a boil and then let simmer.

You can serve it right away or let it simmer on the stove until you are ready to eat. I normally will fix it while my little one is at Preschool and let it simmer all day.

Top the soup with shredded cheese and a dollop of  sour cream and serve with Tortilla chips.
